Zidaela stands for Zi for Zian, Da for David, Ela for Pamela. The family behind this traditional and artisanal jam manufacturing in Pondicherry.
Through their jams, David wants to promote short circuits, he addresses producers close to Pondicherry who he retains. Whenever possible, he looks for fruits produced without pesticides, which is not easy.
By working with products that have not undergone freezing, its production of jams follows the seasons and is dependent on the weather and its whims.
He works the fruits when ripe, in small quantities, with only pure sugar and other magical ingredients like spices, but no citric acid, no gelling agent, no pectin.

I love Zidaela collection of artisanal jams. From Goyava with black salt and red chilli to pomme cannelle, they offers a wide range to satisfy all buds. As a Franco-Indian, I highly recommend !
